Join us in The Byerley for a five-course degustation menu expertly curated with the flavours of Latin America by Atlas Head Chef and Owner, Charlie Carrington.

Charlie is an entrepreneurial young chef with a passion for travel and adventure. Introduced to the culinary world by his great aunt, Charlie left school at 16 to work in some of the world’s best kitchens, including the three Michelin-starred Restaurant Gordon Ramsay and Sydney's Fire Door. At 22, Charlie opened the globe-trotting concept restaurant Atlas Dining, becoming Australia's youngest chef to be awarded a Chef’s Hat—an accolade he still holds to this day.

Eight years on, Atlas Dining continues to be one of the most unique restaurants around.
